If we are what we eat, now who are we?
Globalization is nothing new… Take for example, the ubiquitous tacos al pastor (pictured below) which are always served off a rotating spit with quite some panache as the taqueros – taco vendors – make the meat jump into the waiting tortilla. While these seem quintessentially Mexican to all of us, tacos al pastor are also referred to as “tacos árabes” (Arab tacos), and the origins are rumored to be Lebanese… To our great delight, at the CIEE conference in Istanbul this past November, the same meat-on-a-spit design showed up around the city. Served in bread, the taste was, nonetheless, the same. Food for thought…
